Chine-easy

At some point I finally realized that almost anything you can get when you're out to eat can be recreated at home... you just gotta google for a similar recipe [= Mushroom Chicken is something that I will only eat from the Chinese fast-food place in the mall, Panda Express. Since we were on our whole make-it-ourselves kick I searched for the recipe and eventually found one that sounded doable. This is recipe can be done any night of the week since it really is a 30 minute meal! Enjoy!








Better Than Panda's Mushroom Chicken
When you're craving Chinese food this is a quick way to get your fix.

Cooking time: 10m

Serves: 4


Ingredients
  • 1 lb boneless, skinless chicken breast
  • 3 medium zucchini, cut into pieces
  • 8 oz. mushrooms, cut into halves
  • 2 tbsp oil
  • Marinade
  • 1 tsp cornstarch
  • 1 tsp rice wine
  • Sauce
  • 1 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp sugar
  • 3 dashes of white pepper
  • ⅛ tsp sesame oil
  • Salt to taste
  • 2 tbsp water
  • 1 tsp cornstarch
Preparation
1. Marinate chicken with wine and cornstarch. Set aside to marinate for 15 min. (Use this time to make sauce and chop vegetables.)
2. Heat oil in a large pot. Add chicken and saute until almost fully cooked.
3. Add mushrooms and zucchini and saute until cooked.
4. Add sauce and stir enough to coat the chicken and vegetables. Cook for 1 min more or until chicken is fully cooked.
